Kikar honey comes from the groves of Vachellia nilotica, the kikar tree that grows across the Gwalior region and much of northern and central India. It is a tree most people recognize without knowing its name. Common, hardy, deeply rooted in the Indian landscape. The honey it produces is anything but ordinary.
Dark in color, full in body, with an earthy depth that develops slowly on the palate. This is not a honey you taste and immediately move on from. It stays. It asks you to pay attention. For people who already drink their coffee black or their chocolate dark, Kikar honey will feel immediately familiar.
This is the most complex variant in the Florabee range. It is also the one people tend to keep for themselves.
Our bee colonies are introduced to Kikar groves in the Gwalior region during the tree’s flowering season. Kikar blossoms are small and densely clustered, and the bees work through them methodically across the harvest window. The result is a honey that carries the full character of the tree and the soil it grows from.
Single source, single season, nothing added. The depth in the flavor is not manufactured. It is what happens when bees spend an entire harvest in one kind of grove and the honey is left alone afterward.

Evening (best use): A teaspoon alongside dark chocolate after dinner. The bitterness of the chocolate and the earthiness of the honey meet in a way that makes both taste more considered. This is the pairing Kikar honey was made for.

With espresso: A small spoon stirred into a short black or doppio instead of sugar. The honey does not sweeten so much as it deepens. The result is a cup that tastes like it took longer to make than it did.

Post-dinner ritual: On its own, slowly, as a deliberate close to a meal. The kind of thing you eat with attention rather than appetite.

What it does not suit: Light teas, delicate preparations, or anything where you want honey to stay quietly in the background. Kikar has too much presence for that. Use it where depth is welcome.
